Full Recipe:

Ingredients

  • 4 medium carrots, peeled and cut into chunks
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 ½ cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1/2 cup fresh orange juice

For the Chocolate Glaze:

  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a blender or food processor, blend the carrots, vegetable oil, eggs, sugar, and vanilla extract until smooth.
  3. Pour the carrot mixture into a large bowl. Sift the flour, baking powder, and salt into the mixture, then stir in the orange juice until combined.
  4. Pour the batter into the prepared baking dish and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cake is baking, prepare the chocolate glaze. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the chocolate chips until smooth.
  6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Once the cake has cooled, pour the chocolate glaze over the top and spread it evenly.
  8. Slice and serve. Enjoy!
